Instructions
Prep
Mince all the vegetables in a food processor. Otherwise, mince/grate them manually.
Mix all the ingredients in large bowl. Save one egg.
In a small bowl, crack that egg, then beat it with a whisk or a fork . This will serve as a glue for the rolls.
Rolling
Peel one lumpia wrapper (Note: It is better to peel one wrapper at a time. Otherwise, the peeled wraps will harden due to exposure to air.
Place about 2 tbs of the meat and veggie mix along the edge of the wrapper.
Roll the lumpia.
With a brush or a finger, apply some of the egg on the edge of the rolled lumpia.
Gently roll the rest of the lumpia onto the edge.
Cut the roll in half.
Frying
Fry the lumpia until golden brown.
Serve with sweet chilli sauce. We recommend the Mae Ploy brand.
