This is incredibly cool in the process of olive oil extraction. Three millstones turn, mashing the olives and the stones into a paste. The wheels turn fast, so you feel a little nervous for your fingers (and children). The blur of the wheels in the photograph is not an accident.

The grinding machine then spreads the paste of fiber mats for pressing.

The entire process takes place at room temperature, which, in this case, was in the low 60ºF’s. The paste itself is actually cold. This is different that the modern mills, which operate at over 70ºF, and according to the owners is one reason why oil from a traditional mill tastes better.
