Olive Oil Production, The Centrifuge

The centrifuge spins, separating the perfect green oil from a brownish water contained in the olive paste. There are two pipes running out of the centrifuge, and we were invited to taste the oil straight from the spigot. Unlike wine, olive oil is perfect at the moment of production, and while it is good at holding its flavor for months, it is basically downhill from here. The taste is wonderful.
