Pressing the Disks

Olive Oil Production, Pressing the Fiber Disks.

A large hydraulic press slowly pushes up, forcing the olive oil and water mixture down the sides of the disks, into the tray that catches it, and routes it toward the centrifuge, located just to the left of this photo. The two gentleman pictured own a Fattoria (olive groves, vineyards, and winery) and they were watching over everything, tasting their oil, and even carrying containers of olive oil and olives. They were very gracious talking with us through throughout the process.
