You can tell spring is in the air for our guest chef recipes this month as lighter fare was the theme in their Forno Bravo and Bella ovens. Here's the latest from Chef Lea and Brigit Binns:

Chef Lea Bergen
Olive and Lemon Pizza
Springtime is just warming up here in New York State's Hudson Valley. We've had some glorious, sunny days in the past few weeks, but we're not safe from hard frosts yet. That means there's not much in the way of local spring produce. Be grateful, you warm weather friends with your green garlic, sweet spring onions, enticing asparagus and fragrant herbs from the garden. Read more...

Asparagus, Fontina and Arugula Pizza

Forno Bravo Home Gas Pizza Oven Kits

The wait is over! Forno Bravo is now accepting orders for home gas versions of the Casa and Premio modular oven kits! The gas option can be used with either liquid propane (LP) or natural gas (NG), and the ovens and gas burners are UL listed for outdoor use in the US and Canada.
"We've seen an increase in residential customers asking for a gas option," said Anthony Rodriguez, Technical Support Specialist at Forno Bravo. "Some people are looking for the convenience of gas, but we also want to provide a solution for people who live in areas that have local bans on outdoor wood fired cooking appliances. Now everyone can enjoy the experience of an outdoor pizza oven."
The gas option will be available with the kit alone or with a pre-fabricated steel stand and hearth to house the burner unit. The burner provides a low (32,000 BTU) and high (66,000 BTU) output. When installed, the ovens can be used as wood, gas or wood/gas burning combinations. An upgrade kit for Forno Bravo owners with existing ovens built from Casa or Mermio kits will be available in June 2016.
The kits come with everything you need to build a pizza oven plus the burner, control box, gas regulator, remote thermometer and gas leak detector.

Product Spotlight: Napolino

The Napolino (little Napoli) is a beautiful Naples-style wood fired oven that features the traditional center vent and tiled enclosure found in pizzerias in Italy. Built from the Giardino kit, the Napolino is a versatile assembled oven perfect for families who want the pizza oven experience without a construction project. Using the steel powder coat stand or setting it on a grill island, the Napolino is an elegant yet simple solution to complete your outdoor living space. Either the 24″ or 28″ cooking floor is ample space for a pizza party, baking bread, or roasting meats or poultry. You can customize the tile colors or even include a name, initials or logo in the tilework.
New Product! Commercial Oven Type 1 Hood

Forno Bravo is introducing a commercial Type 1 exhaust hood available in May 2016. The oven-mounted hood, manufactured by Gaylord Industries, is designed specifically to fit Forno Bravo commercial grade ovens. Like the Forno Bravo commercial pizza ovens, the exhaust hood is UL listed to the UL710 Standard for the US and Canada.
"Our commercial customers have been requesting a Type 1 exhaust hood that specifically fits our Professionale, Modena, Napoli and Roma commercial ovens," said Matt Petersen, Forno Bravo Operations Manager. "We partnered with Gaylord Industries to develop a hood that fits all of our models and offers upgrades for safety and convenience. Now we can offer commercial customers a one-stop shop to complete their oven installation."
The hood is constructed of 18-gauge stainless steel and includes spark arrestor hood filters. Optional upgrades include Demand Control Autostart, a feature that automatically starts the exhaust fan if the exhaust fan switch has not been turned on, and interior globe lights.

Pizza Quest with Peter Reinhart - Guest Columnist Scott Wiener
As much as I love them, pizza competitions are super weird. You only get one shot to make the greatest pizza of your life, the one that's going to win you the pride and admiration of all your friends and colleagues, but you have to do it in a strange place with an unfamiliar oven and dough you made in the hotel bathroom sink. These factors plague my brain while I'm sitting behind the judge's table scrutinizing slices from some of the best pizza makers on the planet. I've been judging American pizza competitions since 2007 and recently returned from my first experience judging an Italian event – the Pizza World Championship in Parma – and my head is still reeling.
