Wood fired strawberry jalapeño margarita

(Serves 2 – Time 15 Minutes)

Cocktail in a wood fired oven? Yes Please! This quick Backyard Session with Eric Wilson puts a wood fired spin on the classic strawberry jalapeño margarita. You still get the heat and the sweet along with the added complexity of caramelized fruit, cedar wood plank and the wood fired smokiness.

Wood Fired Strawberry Jalapeño Margarita

Ingredients
  

  • 2 Limes - Medium to large, cut in half
  • 1/2 Orange
  • 1 Jalapeño - Cut in half lengthwise and deseeded
  • 5-7 Strawberries - Hulled
  • Baker's Sugar - For coating citrus and strawberries
  • 3-4 oz Tequila of choice
  • 1 ½ oz Grand Marnier
  • Cedar plank - Soaked in water for at least an hour plus
  • Cast iron pan - To rest cedar plank on so it won’t burn on the oven floor
  • Shaker
  • Salt - For garnishing the rim of the margarita glasses

Instructions
 

  • Preheat wood-fired oven to around 700 Degrees F
  • Coat the cut side of the orange and limes in baker’s sugar, place on the cedar plank resting on a cast iron pan. Roast in the oven for around 2 minutes just to activate the citrus and starts to caramelize.
  • Add half the jalapeño and continue roasting for another 1-2 minutes. Use the whole pepper if you like more heat.
  • Coat the strawberries in baker’s sugar and place on the backside of the citrus to protect them from the fire a bit. Roast for another 2-3 minutes.
  • Add ice, jalapeño, and the strawberries to a cocktail shaker and give it a good initial shake to break it up and distribute the jalapeño flavor.
  • Squeeze in the juice of the citrus, followed by the Tequila and Grand Marnier. One more good shake, pour into salt-rimmed glasses, and enjoy!
