* Chef Vito hails from a long line of Sicilians. Marks of that region’s cooking are simple, clean flavors, and using the freshest ingredients you can find. Because this pizza does not use a heavy sauce, you will really taste each element of the pie!
Ingredients
- Chipotle dry-rubbed chicken
- Bacon
- Spicy BBQ sauce
- Mozzarella
- Thinly sliced red onion
- Cilantro
Preparation & Making Your Pizza
- Rinse the chicken and pat it dry with paper towels. Apply your dry-rub to both sides.
- Par-grill chicken breasts in the oven on a Tuscan grill or a cast iron pan. Set aside to cool, then cut into small pieces
- Optional – drizzle a little olive oil onto the dough after stretching it, before adding your toppings
- Layer mozzarella, chicken, bacon, and onions (in that order) on the prepared dough
- Fire in the oven (apx. 600°F for apx. 3 min, turning at least once – though you can adjust the temp and time to match your dough and preferred level of crispness )
- Dress with BBQ sauce and cilantro
- Serve and Enjoy!
