Refractory Mortar
There are two methods for sealing your Casa or Premio oven. You can either seal the oven joints and vent with RefMix refractory mortar, or you can seal the joints and vent, then coat the oven dome with additional RefMix. For more information on installation, please read our installation pages.
For a majority of home cooking requirements, we recommend that you only seal the oven joints. The optional coating of mortar provides additional thermal mass, which will help the oven hold heat for longer periods of retained heat cooking -- primarily for baking multiple batches of bread (50 loaves of more) from a single firing. The additional thermal mass takes a little longer to heat up, and is not necessary if you will be using your oven primarily for home baking, such as pizza, roasting, fire-in-the-oven cooking, and single batches of bread.

An additional layer of refractory mortar is highly recommended for commercial ovens, which are designed to remain hot 365-days per year.
