High quality ingredients are an incredibly important part of Italian and wood fired oven cooking. I once heard it said the one of your goals in cooking Italian should be to not get in the way of the ingredients, but rather to let the tastes of the food come through. The Caprese salad is the perfect example. A simple salad made from vine ripe tomatoes, fresh basil, fresh true mozzarella and the best extra virgin olive. A great Caprese salad is a wonderful thing. Now, imagine that same salad with rock-hard off-season tomatoes, dried basil, string cheese and a highly processed olive oil -- or even worse, corn oil. I often think about the Caprese salad when selecting ingredients for other dishes I am preparing, and remember that the meal will only be as good as what goes into it.
This is particularly true for pizza, where you tend to feature a small number and small amount of the best foods on the earth.
